Two Words

Culinary Kudzu.
Chicken Soup with Kudzu Sprouts, Kudzu Flower Fritters, Crystallized Kudzu Blossoms, Kudzu Blossom Spread, Kudzu Blossom Ice Cream, Kudzu Blossom Syrup, Kudzu Blossom Vinegar, Curried Carrots with Kudzu Blossoms
Seems that you can also use the roots. With how much of it there is around, this may be useful TEOTWAWKI fare.

Kudzu really does look a lot like poison oak. Really. A lot. No, I didn't eat it but I did pick a lot.
