Mexican pizza

The kids really like this as a change of pace.

Preheat oven to 450°

Make regular pizza dough:
1 Tbsp yeast with1 Tbsp sugar in 1 cup warm (not hot) water
When foam appears on on surface of yeast mixture, mix 2 cups flour
Let rise 45 minutes
Kneed the (rather wet) dough with flour until it's dough texture
Roll to pizza shape
Instead of pasta sauce, use chipotle salsa

Instead of mozarella, use queso fresco and shredded pepper jack

Fried chorizo makes a fine topping, as does roasted corn (yum!)

Bake 8 minutes until cheese just starts to brown.  Garnish with ibuprofin if you've just been to an Appleseed shoot.

Ibuprofen, feh. Did Washington's men take ibuprofen at Valley Forge? Did Paul Revere take acetaminophen for his saddle sores?

Real men took aspirin and liked it.

I love Mexican pizza. Sadly, it doesn't love me back.

Dangit, Dave H beat me to that bit of History. I will point out, though, that Mr. Washington's Men used aspirin, and chugged it straight from the bottle. No dainty "stuff the little cotton ball back in, could someone fetch me a glass of water thank you?" Shoot em raw, thump your chest a few times, sound your barbaric yawp, and release the hounds of war! Rarrr!

...er...Yawp!!!

When we love taco pizza. Especially our children, but we have to make it because one can't buy it around these parts.

One of our favorite things to do when we travel to Minnesota is stop at a Casey's General Store and order a taco pizza. The best in our opinion.

Yours is much fancier...gonna have to try it!
