Not sure if modern cars would even be restorable as they have so many electronics that come and go. Mechanical things can be repaired, but if you don't have the right chip, will the car even run? If your "infotainment" center fails, good luck.
You could always build a Factory Five Cobra and have a carburetor and old fashioned gauges -- they will work.
